Its not rare that Mr. Amazing has to go out and meet a delivery driver, to hurl bags of flour over his shoulder and bring them into my kitchen. A few years ago we did a deep dive on grains and flours, from large to small farmers and millers, across this country. We read, studied, bought, tested and retested as many as we could find. Before we opened our doors, we wanted to know we had the best whole and milled grains for our bread and pastry.

A long list dwindled down to a very few we could truly trust, and we’ve been thrilled with every small batch we’ve received from places like Janie’s Mill, who love to share their knowledge and experience in growing and milling incredible grains. As time has gone on, we’ve been even more excited to see an increasing number of small batch, high quality and regenerative grain farmers and millers starting to share their passion. So much so, that we continue to hunt for them like treasure.

A short while ago I came across a small grain farmer and miller from Three Forks, Montana who shared a wealth of first hand knowledge out of pure passion for his craft. And I couldn’t have been more thrilled to listen. Today, Mr. Amazing hoisted another bag of flour over his shoulder and brought it in to my kitchen, with a handwritten note thanking us for supporting his small family farm and regenerative practices, and wishing me happy baking.

This is more than a bag of flour. From one small batch artisan to another, this is a bag of potential.
