Every ingredient matters, and we don’t cut corners. Ever.
organic grains & flour
We start nearly all of our baked goods the same way. By sourcing the highest quality grains and flour, whenever possible, from small mills employing only the highest of standards. Our grains and flour are always organic, unbleached, unbromated, and milled and batched just for us. And, as flour is by nature, raw. They’re so fresh, these high quality mills insist we order in smaller, more frequently delivered quantities and store them in specialized conditions. Which we’re thrilled to do, because it means the very best baked goods.

Before we ever opened our doors at 1871, we installed a very large multi-stage water filtration system on the entire property. This system filters every drop, to ensure every bread and pastry is made with pure, clean, healthy water.
Small, specialized artisan ingredients
Some of the most amazing ingredients come from small, specialized farmers and artisans who spend all of their time perfecting the sourcing and process for ingredients they’re passionate about. Everything including spices, herbs, extracts, coffees & teas. They’re all authentic, natural and respected to create unprecedented quality and flavor. Small batch, freshly sourced, treated honestly, and simply amazing. They are the heart of 1871’s flavors.
