At The Bakery at 1871 we are incredibly proud of the ingredients we use. We have been since day one, which is why we put them right in front of you. From listing the simple and organic ingredients right on our shelf tags, to writing about our sourcing and standards, to hauling 50 lb bags of the highest quality flour right into The Bakery because someone asked. We LOVE talking about them.
Why? I mean, it’s a little weird to love ingredients so much.
Before we ever created a menu, or even decided on a single baked good, Mr. Amazing and I started hunting for the really good stuff. Grains grown, organically and regeneratively, and stone milled in small batches on a family farm. Small, artisan vanilla crafters. Local, organic eggs from happy hens. Fruits and vegetables from small family farms around us…Then we brought our muddy boots home and tried, tested, and experimented to celebrate all the good in our amazing finds. To bring out the very best ingredients could offer.
I am proud, every day, of our bread and pastry. Sure, I have spent 30 years honing a small batch, handcrafted process that I love. But every airy crumb, crispy crust, flaky croissant web, rich custard, and sweet compote is only possible because of the farmers, millers and artisans who share their passion with us. Those who get up every day, and likely devote nearly every thought, to making an amazing grain, flour, vanilla, egg, or berry.
Sometimes I feel like our passions choose us. Maybe they’re buried deep inside of each one of us, like a gift for us to find and share. I made my first batch of chocolate chip cookies when I was still a middle-schooler, wearing trendy geometric patterns with hair-sprayed blond hair (some of you know what I’m talking about). As I ate one warm from the oven, I started to wonder how to make it better. For years I played with that back-of-the-bag recipe, changing and adjusting ingredients, until it was everything I wanted a cookie to be. Then I started all over again. And again. From that first cookie day on, I couldn’t wait to get my hands into batter and dough. There’s a spark in people when they’ve found their passion. When they love something enough to devote incredible amounts of time and effort to making something special and sharing it. It’s the hallmark of an artisan. And I look for it in every farmer, miller, and craftsman when we’re sourcing ingredients. Directly from the source, directly from the artisan. I honestly believe you can taste their care in every loaf and pastry we make.
At 1871, in The Bakery and The Curated Pantry, we want to spend every day seeking out that artisan spark, near and far. Using and promoting all the very best things out there.
